Profile of Dr. Cheryl Rock

Meet Dr. Cheryl Rock….she is currently an Assistant Professor of Food Science at the California State University, Long Beach (CSULB), since 2014.

Dr. Rock also serves as the faculty advisor of the Food Science Club Chapter at CSULB, California USA, where she facilitates the mentorship of students and their involvement in the Institute of Food Technologists (IFT) and

IFT Student Association (IFTSA) sponsored activities. She is a native of Barbados and after completing her Associate’s degree in Biology and Chemistry at the Barbados Community College (BCC); she received her Bachelor’s Degree (B. Sc.) in Food Science and Technology with a minor in Chemistry from the Alabama Agricultural and Mechanical (A & M) University. In 2007, she continued with her Master’s Degree (M. Sc.) at the same university specializing in Nutritional Biochemistry and Carcinogenesis. In 2012, she obtained her Doctor of Philosophy (Ph.D.) from the University of Florida (UF), where she specialized in Food Engineering and Processing, primarily Power Ultrasound (PU) and Pulsed Ultraviolet Light (PUV) technologies. Her research experiences and interests include dietary chemoprevention as well as studying the effects of novel food processing technologies such as bioactive compounds in food products. 

In her short track record as an academic, Dr. Rock has published over 13 peer-reviewed article(s) in the Journal of Food Engineering Reviews, Journal of Food Engineering, International Journal of Food Science and Florida State Horticultural Society Proceedings, Sustainable Agriculture Research as well as the Journal of Food Research respectively.

One fun fact is that she served as a Judge in the Institute of Food Technologist Disney Student Product Development competition in Chicago, USA and is currently facilitating a short-term study abroad course here in the beautiful island of Barbados, where 35 CSULB students have joined her to engage in some of the cultural activities. 

She will be presenting on Functional Foods &  “Formulating, Developing and Marketing Foods for Diabetics”.
